Racking

The most classic cellar operation and one of the most frequent: the clear wine is drawn off, the deposit stays behind. The quantity changes in the process — through the loss to lees — and usually so does the vessel.

Which is exactly why every racking belongs in the cellar book: it changes stock and location at once. Write it up in the evening instead of entering it at the vessel and you are later reconstructing from memory which tank took which.
