Cellar Append-only A method in which entries are only ever added, never altered and never deleted. Cellar Audit-proof record keeping Records that cannot be altered, are complete, and can be followed.

Cellar Batch A defined quantity of wine that is treated and tracked as one unit. Vineyard BBCH stage A two-digit number describing how far a plant has developed — for the vine, from winter bud to leaf fall. Cellar Blending Bringing several wines or musts together into a new one — with every consequence wine law attaches to that. Vineyard Botrytis Grey rot — dangerous from bunch closure onwards, when the inside of the bunch stops drying out. Cellar Bottling The move from vessel to bottle — the point at which a batch becomes articles with stock.

Till & invoicing Cash count reconciliation The property that the calculated till balance can be reconciled with the cash actually counted at any time. Till & invoicing Cash register inspection (Kassennachschau) An unannounced inspection of till records by the German tax office. Cellar Cellar book The record of every movement and every treatment in the cellar that wine law requires. Business Consignment stock Wine standing at a merchant or a restaurant that belongs to the estate until it is sold. Business Contribution margin What is left of a revenue once the variable costs have been taken off.

Till & invoicing EN 16931 The European standard setting out what an electronic invoice has to contain. Cellar Enrichment Raising the natural alcohol content by adding sugar or concentrated grape must. Vineyard EPPO code A five-letter code that identifies plants and pests unambiguously across borders.

Obligations & declarations Fertiliser regulation (DüV) The rule requiring a requirement assessment before every fertiliser application and a record afterwards. Vineyard Field record The record of every measure carried out on a management unit that the law requires — in winegrowing, per parcel. Cellar Fining A treatment that binds cloudy matter and clarifies the wine — with bentonite, gelatine or plant-based agents.

Till & invoicing GoBD The German administrative rules on how tax-relevant data is to be kept and retained in digital form. Vineyard Grape intake The step by which picked grapes are taken into the cellar and recorded for the first time.

Vineyard Leaf wall area The actual target area of a vineyard block, worked out from row width and canopy height rather than from ground area. Vineyard Leaf wetness duration How long a film of water lies on the leaf without a break — the single most important measurement for infection risk. Cellar Lot number The marking by which one bottled lot can be identified beyond doubt. Obligations & declarations LUCID The German packaging register in which anyone supplying packaged goods must register before first placing them on the market.

Cellar Oenological practice Any permitted intervention on the wine that has to be recorded — from deacidification to filtration. Obligations & declarations Official test number (AP number) The proof that a quality wine has passed the official examination.

Obligations & declarations Packaging regulation (PPWR) The EU regulation that requires anyone supplying filled packaging to private end consumers to register, join a scheme and declare quantities. Business Perpetual inventory Adjusting stock continuously with every receipt and issue, instead of counting once at the year end. Vineyard Planting authorisation Official permission to plant a particular area with vines. Vineyard Powdery mildew The vine disease that likes it warm and moderately humid and wants no leaf wetness at all. Vineyard Pre-harvest interval The period between the last application of a plant protection product and the harvest. Business Price level A price differing from the list price that applies to a particular customer or customer group. Obligations & declarations Production declaration The declaration of what was actually produced in the cellar out of the harvest.

Cellar Racking Moving the clear wine off the lees into a clean vessel. Till & invoicing Receipt obligation The duty to issue a receipt for every sale — whether or not the customer wants one. Vineyard Resistance group The classification of a product by its mode of action — the basis for how often it may be used in a season. Cellar Reversing entry A new entry that cancels an earlier one — instead of deleting it. Vineyard Risk indicator The calculated infection risk per disease and parcel, shown as a colour band.

Business Seasonal worker Somebody who works on the estate only part of the year — at harvest, in the farm shop, at the wine festival. Vineyard Site A defined, named area of vineyard whose name may appear on the label. Business Slow mover The article with the fewest sales — the list hardly any shop system shows you. Obligations & declarations Statement of origin The geographical indication on the label — ordered by the new origin pyramid from growing region through Region and village wine down to Einzellage. Obligations & declarations Stock declaration The annual declaration to the competent authority of the wine held on 31 July. Obligations & declarations System participation The contract with a dual system that funds the collection and recovery of packaging.

Till & invoicing TSE (certified security module) The certified module that signs every till transaction and logs it so that it cannot be altered.
