Enrichment

Raising the natural alcohol content by adding sugar or concentrated grape must.

Permitted only within narrow limits that depend on the wine-growing zone and the quality level. Prädikat wines may not be enriched at all — with them the alcohol comes entirely from the must weight of the grapes.

Enrichment has to be notified and recorded. An enrichment not notified in time turns permitted cellar work into a breach — with the wine entirely unchanged.
