Cellar
Fining
A treatment that binds cloudy matter and clarifies the wine — with bentonite, gelatine or plant-based agents.
In law, fining is a permitted oenological practice with regulated agents and maximum quantities. Agent, quantity and date have to be recorded.
With some agents a labelling duty for allergens comes on top. What was added in the cellar therefore decides the text on the back label — and that belongs in the same record, not in a second list.
