Traceability

The duty to be able to show, for any product, one step back and one step forward.

Set out in Article 18 of Regulation (EC) 178/2002 and therefore the same for every foodstuff. For a wine estate it comes to this: where did the grapes come from, and where did the bottle go.

The evidence has to be available without delay, not within weeks. That is exactly where a record fails that is complete but spread across three systems and two folders.

Related terms

Cellar book The record of every movement and every treatment in the cellar that wine law requires. Batch A defined quantity of wine that is treated and tracked as one unit. Lot number The marking by which one bottled lot can be identified beyond doubt.
