Botrytis

Grey rot — dangerous from bunch closure onwards, when the inside of the bunch stops drying out.

Botrytis cinerea wants high humidity at a moderate temperature. Before bunch closure it is rarely an issue; afterwards all the more so, because the berries touch and the air inside stands still.

It is the case where harm and benefit sit close together: under the right conditions grey rot becomes noble rot. The difference is in the weather, not in the fungus.
