Harvest declaration

The declaration of the quantities harvested, by area, variety and quality level.

It records what was actually picked and is the basis of the yield-per-hectare check.

Record the harvest per parcel anyway — quantity, variety, must weight — and the declaration is a by-product. Reconstruct it from notes at the year end and it is an evening’s work.

Yield per hectare The quantity harvested per hectare — capped by German wine law. Grape intake The step by which picked grapes are taken into the cellar and recorded for the first time. Cellar book The record of every movement and every treatment in the cellar that wine law requires. Stock declaration The annual declaration to the competent authority of the wine held on 31 July. Production declaration The declaration of what was actually produced in the cellar out of the harvest.
