Stock declaration
The annual declaration to the competent authority of the wine held on 31 July.
What gets declared is what is on the estate on the reference date — broken down by product, vintage and quality level.
It is the return that exposes keeping data twice: run the cellar book in one system and add the declaration up in another, and you have to hope the two say the same thing.
Out of a cellar book kept without gaps it arises instead by calculation, not by collection.
